About the Role:
As a Development and Tasting Senior Sous Chef, you will play a pivotal role in crafting seasonal menus, designing bespoke dishes, and ensuring impeccable execution from kitchen to event. This role requires strong culinary creativity, ideally gained form a Michelin star restaurant background with an keen understanding of costing, allergens, and sustainability in food preparation.
Key Responsibilities:
- Develop, design, and cost all canapés, la carte menus, and food stalls for events.
- Lead seasonal tastings for the events team, providing tasting notes and photography documentation.
- Work closely with the marketing team to showcase new dishes and content throughout the year.
- Collaborate with event managers and head chefs to create one-off bespoke menus.
- Conduct workshops and training sessions for the kitchen production team on new menus.
- Document clear spec sheets, allergen information, and order sheets for all dishes.
- Ensure consistency in product execution through teaching and mentoring the brigade.
- Maintain high standards of hygiene, health, and safety, ensuring compliance with industry regulations.
- Promote sustainable practices within the kitchen and across the business.
- Prepare and deliver client tastings, taking a client-facing role when necessary.
- Attend and oversee events to ensure flawless food execution.
What Were Looking For:
- Recent experience cooking to Michelin star level
- Proven experience in menu development and event catering at a senior level.
- Strong knowledge of costing, allergens, and food safety regulations.
